Chicken Dhansak


  1. Put the lentils, squash, onion and tomatoes in a pan with the turmeric and 1 tsp salt
  2. Add water to just cover, then simmer gently for about 20 minutes until the lentils are tender
  3. Heat 1 tbsp oil in a pan, add chicken and brown all over
  4. Remove chicken from pan and add the cumin, coriander ground spices and the cardomom pods
  5. Cook for 2 minutes then stir in the ginger, garlic and chillies
  6. Cook for a few minutes then add the chicken, lentils, squash and 200ml more water. Cover and simmer for 45 minutes (remove cover for final 10 minutes) or until the chicken is completely tender and sauce thickened. 
  7. Stir in the garam masala and coriander and serve with steamed basmati rice or chapatis
